Ingredients

3 cups arugula
1 avocado, cut in half and sliced
Grape tomatoes, halved or sliced if they are larger
1 tub (190 g) fresh mozzarella, sliced
Sunset Seasoned Pepper (Retired)
2 Tbsp. extra virgin olive oil
Juice from 1/2 lemon
Fresh basil leaves, torn or left whole

Instructions

Divide arugula into 2 serving bowls, arrange avocado, tomatoes and mozzarella over top, then add a few fresh basil leaves. Mix together olive oil and lemon juice and drizzle over salad. Sprinkle with salt and Sunset Seasoned Pepper (Retired), to taste
